About This Company
Award-winning chef Chris Adlesh, the owner of Truly Yours Catering, began his food career as a busboy at age nine. Eventually he convinced his boss, who happened to be his Dad, to let him into the kitchen. Chris soon realized that food was his destiny. He trained as a chef at the prestigious Culinary Institute of America, and then worked as Executive Chef for major cruise lines. “I loved traveling,” Chris reminisces, “and getting to sample all that authentic international cuisine!” His globetrotting not only influenced his cooking palette, but also taught him how to work under limitations. “Sometimes you are literally out at sea, and need to improvise with what’s at hand. You also have to be prepared to handle any emergency—like when the ship takes an unexpected turn and the entire lunch buffet ends up on the floor!”
Chris’ ability to remain calm under pressure makes him a natural for the catering business, and when he married and became a landlubber again, he opened his own catering company. Success followed, and he’s been delighting clients with his fun personality, artistic presentations, and fabulous food ever since.
When you first talk to Chris, he’s so personable and down-to-earth you might underestimate his professionalism. That would be a mistake; beneath his easygoing attitude is an experienced specialist who places high expectations on himself and his staff. He only hires trained food servers who have worked in restaurants or hotels. Fellow event professionals have learned that they can rely on Truly Yours to be punctual and prepared, as well as adaptable. Whether it’s an unexpected rainstorm or tiki torches that refuse to light, one coordinator has learned that, “Chris will troubleshoot and get things done. He thinks on his feet and can roll with the punches. He’s great!”
Although Chris is a stickler for details and planning, he is also flexible, working within your budget, site restrictions and style. “I’m not the type of caterer who tells you that you can’t have the appetizer you want with a particular entree. I am more than happy to shape your menu, but the bottom line is you can have it the way you want it.”
To make sure he knows exactly what you envision, Chris meets with you several times before the big event, including a tasting in your own home, where he serves up a selection of mouth-watering delicacies. After one tasting, the client declared that, “Chris just blew away the competition!” The mainstay of Truly Yours’ food is fresh, California cuisine, but they’ll do anything from Armenian to sushi.
You also have your choice of presentation style, but if it’s excitement you’re after, you might want to try one of Chris’ favorites: interactive food stations. The dishes are prepared right in front of the guests, who are invariably awed by the performance. And for even more drama, Truly Yours will provide ice sculptures, theatrically lit from below.
Chris Adlesh has been asked to prepare meals for such notables as the King of Jordan, Nancy Reagan and Michael Jackson, yet he treats every client with the same warmth and careful attention. Truly Yours is one of the few catering companies that owns all their own equipment, including tables, chairs, cutlery, linens, etc; their all-inclusive pricing keeps the fees competitive and leaves you with less to worry about.
